Avocado Cream

One of my favorite eats is a good - no - GREAT Mahi Mahi fish taco with good - no - GREAT homemade salsa, some thin sliced onions, maybe some spicy black beans and a big "SLATHER" of Avocado Cream. There are many variations of the fish taco that are very satisfying but for me the topper has to be "The Cream". So here is my version of Avocado Cream.....

1 Ripe Avocado
1/2 cups sour cream or creme fraiche
1 small handful cilantro - depending on your taste use more or less
1 clove garlic - rough chop
splash of lemon juice and lime juice
salt and pepper to taste

Put everything in a blender or food processor and mix til smooth.....

IF you want a different taste add some cumin (1 tsp) OR a chipotle pepper OR get crazy and add some habanero pepper.

I use "The Cream" on tacos, meat or fish, chicken salad sandwiches, hot dogs with dog slaw....almost everything.....give it a try!!
