Bangkok BBQ Chicken

My brother Paul sent me a recipe for Bangkok BBQ chicken and has said it is fantastic, it sounds awesome so I decided to post it before trying it. He's a great cook so I have no problem taking his word for it.

So here it is.....

Bangkok BBQ Chicken

4 large cloves of garlic peeled
1 large shallot roughly chopped
1” piece of fresh ginger peeled and roughly chopped
1 medium jalapeno chili, stemmed and roughly chopped
1 cup lightly packed basil leaves
1/2 cup coconut milk
2 tbsp fresh lime juice
1 tbsp brown sugar
1 tbsp fish sauce
1 tbsp soy sauce
1/2 tsp ground cumin

1 - 4lb chicken, cut into serving pieces

Drop garlic, shallot, ginger and jalapeno into a running food processor and process until minced. Add basil until finely chopped. Add remaining ingredients – except the chicken.

Cut 3-4 slashes into chicken pieces (1/2” deep). Place chicken in a resealable bag, pour in the marinade.
Draw out excess air and seal bag. Marinade for 6-12 hours, rotating the bag occasionally.

Remove chicken and cook over indirect heat on the grill.

I'm going to try it this weekend with chicken thighs (We have a freezer full).....
