Veal Bolognese

We have some of Danielle's' work friends coming over tonight for dinner, I would have to say that they are my friends also....So I'm making some Veal Bolognese, which is one of my favorite pasta dishes.

1/4 cup extra-virgin olive oil
2 medium onions, finely chopped
2 carrots, finely chopped
5 cloves garlic, finely chopped
1 1/2 pounds ground veal
4 ounces bacon, run through the medium holes of the butcher's grinder
1 (6-ounce) can tomato paste 1 cup heavy cream
1 teaspoon fresh thyme leaves
1 teaspoon fennel seed
2 table spoon Italian herb mix
Salt and freshly ground black pepper

In a 6 to 8 quart heavy-bottomed pot, heat the olive oil over medium heat until hot. Add the onions, carrots and garlic and cook until the vegetables are translucent but not browned, about 5 minutes. Add the veal and bacon, increase heat to high, and brown the meat, stirring frequently. Add the tomato paste, milk, thyme and other herbs and bring just to a boil, then reduce the heat to medium-low and simmer for 1 to 1 1/2 hours.

I also am making fresh pasta - easy to do:

3 cups flour + extra for dusting
4 eggs
pinch salt
1 tbsp water

Put flour then eggs, salt and water in your Kitchen Aid with dough hook and mix until ball is formed. Cover in plastic and let sit for 20 mins. Roll out and cut to width desired, it would be a whole lot "funner" if you had a pasta machine........
