Almost everyone has a recipe for a seven layer or a bean dip or a Mexican spicy multi-layered yummy dip that they take to parties. Well this is my version of the classic dip. I like bold, fresh in your face flavors. The great thing about this recipe is that you can make as many layers as you like.....or as little.
First is the Guacamole:
2 ripe avocados
1/2 medium sweet onion finely diced
2 cloves smashed garlic
1 roasted red pepper small chop
juice of 1 lemon and 1 lime
1 tsp cumin
salt and pepper to taste
Basically mash everything together and you can make it as chunky or as smooth as you like.
Next layer Black Beans:
Simply buy your favorite canned black beans or dry black beans. I like to season them with a little salt and pepper.
Next layer Chipotle Sour Cream:
I chop up some canned chipotle (the more chipotles you put in the spicier it will be) and add to 1 medium container of sour cream....spread carefully over beans
Next Salsa:
5 seeded and chopped large tomatoes
1 medium chopped onion
1/2 bunch of chopped cilantro
2 cloves finely chopped garlic
1 jalapano finely chopped
Salt and pepper
a pinch of oregano
1 tbsp lemon juice and lime juice
And next Shredded Lettuce.........
Next your favorite shredded cheese.....I like sharp cheddar but you could get crazy and us a cotswald, try it sometime it's great!
And to finish up some fresh scallions sliced up and sprinkled on top of cheese.....
For the hot and spicy lovers in your lives you can add more jalapanos or chipotles or serrano chiles, red pepper flakes or even Habaneras.........
